Apple Fennel & Black Pepper Bacon Pork Chops

Ingredients:

2 teaspoons coarsely ground pepper
½ teaspoon salt
½ teaspoon garlic, minced
4 bone-in center cut pork chops (1 inch thick)
2 medium onions, thinly sliced
2 medium tart apples, peeled and chopped
½ cup tart apples, julienned
2 tablespoons Fennel & Black Pepper Bacon Spread
2 tablespoons butter or margarine
2 tablespoons brown sugar

Instructions:

In a small bowl, combine the pepper, salt and garlic. Rub over pork chops and let sit overnight. Remove from fridge and let rest to room temperature, brush off the garlic and grill chops. Grill or pan fry, covered, over medium heat for 7-9 minutes on each side or until a meat thermometer reads 145º F. Meanwhile, in a skillet, sauté onions and chopped apples in butter until tender. Add the bacon jam and cook until warmed through. Cover the pork chops with the apple, onion, bacon mixture. Garnish with fresh apples.
