Founded in 2007, Skillet Street Food began in Seattle as a pioneer of the city’s emerging street food movement. Operating out of a vintage Airstream, Skillet built its reputation on American comfort classics with a creative edge—served with personality, hospitality, and a deep connection to the community. What started as a mobile kitchen quickly became a local favorite, fueled by word of mouth, early social media buzz, and an unmistakable point of view.
As Skillet grew, it found wonderful homes across the city. Locations in Post Alley, Capitol Hill, and the Regrade each played an important role in shaping the brand—serving as gathering places, test kitchens, and chapters in Skillet’s story. While those dining rooms have since closed, their spirit lives on in everything we do today.
Skillet continues to serve guests at Skillet Diner SeaTac Airport and Skillet Counter at the Seattle Center Armory, carrying forward the same commitment to quality, innovation, and genuine hospitality that defined our earliest days. These locations represent both our roots and our future: accessible, welcoming spaces where thoughtful food meets everyday moments.
